When Indirect Grilling

To each mound of lit charcoal, add 2 to 3 chunks (four to six in total).   Once the smoke stops flowing, replenish as needed. 

When Direct Grilling

Grill the food directly over 2 to 3 chunks directly on the bed of coals.

How to Direct Grill Over a Wood Fire

As you would with charcoal, fill your chimney starter with wood chunks and light them.  Pour the orange-coloured embers over the bottom of the grill when they are glowing.   By inserting the grate, you can grill directly over wood.

The main difference is that chunks burn slower than chips. Burn rate is not a concern if you plan to smoke just a handful or two of chips for 20 minutes or so. It might be more convenient to smoke your food in chunks if you intend to smoke it for an hour or more.

Smoking chunks can be placed directly over charcoal. Due to the chunks' larger size, they burn slower and release flavorful smoke, which is absorbed into your meat or vegetables.

The only reason to soak wood chips for smoking is to add a different flavour to the smoke. If you want to impart a unique flavour to your wood chips, you can soak them in virtually any liquid, with the exception of water.
