When smoking pork, apple or olive is often the preferred wood, and fruit and lighter woods are often paired with fish and vegetables.

Simply soak these wood smoking chips in water for 30 minutes before using them in your smoker. In addition to preventing the chips from burning too quickly, the water will help to add moisture to your meal. It is possible to use a smoking box or add the soaked chips directly to the charcoal in your smoker.

 

It is recommended that you use 1/2 cup of wood smoking chips per kilogram of food. It is possible to adjust the number of chips you use to achieve the desired level of flavour intensity. If you wish to achieve a milder flavour, use fewer chips. Adding more chips will result in a stronger flavour.
